Stuffed and fried mussels

Good morning 💚❤️food lovers! Today one of my favorite starters.

Mussels stuffed and fried.

Ingredients:

1 kg organic mussels

200 gr breadcrumb ( toasted with a little oil)

1 glass white wine 🥂

1 egg 🥚

3-4 garlic cloves

50 gr sheep cheese ( I used pecorino romano)

10 cherry tomatoes 🍅

Parsley 🌿

Extra virgin olive oil

Clean well the mussels, in a large saucepan put 2 tbsp oil, minced parsley, 3 cloves garlic just a little crushed and the mussels, then add the tomatoes and cover the saucepan with a lid until the mussels start opens. Leave the lid and add the wine. Let boil 2 minutes and turn off the fire. img_6475Filter the precious juice in the saucepan (save 150 ml) and let it cool. img_6477In a bowl mix up the toasted breadcrumb, the sheep cheese, the egg, the juice of the mussels, parsley finely minced and a clove of garlic squeezed. img_6476Open the mussels and keep away one valve, fill with the breadcrumb mixture, press well.img_6478 And now we are ready for fry! A large saucepan, heat a generous amount of extra virgin olive oil and fry the mussels by the side filled just until become golden. Serve warm. img_6485Buon appetito!
