Capers sauce (without cooking!)

Good morning 💚❤ food lovers! This is a sauce passe-partout. For do it you’ll need only the ingredients and a small food processor and you’ll not have to cook, it’s ready to use. This is a super easy sauce to make, and it can be a delicious finishing touch for simple baked, grilled, or broiled fish, shrimp, chicken and it’s also almost delightful onto a buttered toasted slice of bread for an unusual bruschetta. My boyfriend and I we do ever this sauce when we grill swordfish.

Ingredients

  • 2 tbsp salted capers
  • 1 small clove of garlic
  • 2 to 3 teaspoons parsley
  • 50 ml Extra Virgin Olive Oil

Method

Soak the capers in a bowl with plentiful water for 3 minutes, than strain in a colander and wash it well. Put all the ingredients in a food processor and pulse for 1 minute. Scrape the sides of the food processor, if necessary, and pulse again. For a smoother sauce, add more evoo. If there is more sauce than necessary you can put it in a jar and store it for three days in the fridge or freeze it.
