Good morning 💚❤ food lovers! I think that pizza is, with pasta, one of the most beloved Italian foods. Isn’t? Normally I make a different dough with with grain flour, just a little yeast and a long rise but for many reasons I had to try this special mix gluten-free and the result was also amazing.
Ingredients ( for a oven baking plate 35×45 cm)
- 500 gr special mix gluten-free
- 450 ml water
- 7 gr salt
- 25 ml extra virgin olive oil
- 15 gr fresh yeast
- 200 gr tomato sauce
- 200 gr mozzarella cheese
- 200 gr blue cheese ( italian gorgonzola)
- 100 gr pepperoni ( aka salame piccante)
- salt, pepper, oregano
Method
Combine the warm water and the yeast in a glass measuring cup and wisk well. In a large bowl combine 450 gr gluten free mix (let a side 50gr for dusting) with the water, the yeast, the salt and the oil. Press the dough into a ball. Cover with a wet tea towel and let rise for 40 minutes at room temperature. Preheat the oven to 250°C. Oil the pizza baking plate. Using oiled hands, press the dough into the pan. The dough will shrink slightly as it bake, so press the dough as thin as you can to cover the pan. Let rise for another 10 minutes. Cover your pizza with the tomato sauce seasoned with salt pepper and oregano. Bake for 15-20 minutes. Remove from the oven and add the mozzarella , the gorgonzola and spicy salami . Bake for another 10-15 minutes depending on your toppings. Let cool for a few minutes before slicing. Enjoy!
