Spaghetti with potato cream, octopus and aromatic breadcrumb!

Good morning 💚❤️ food lovers! I really love octopus 🐙 and cooking it in many ways. This is an interesting pasta: Spaghetti with potato cream, octopus and aromatic breadcrumb! 

Ingredients for 4 people

  • 280 gr good quality pasta
  • 1 fresh octopus 🐙 ( almost 1 kg) 
  • 2 shallots
  • 300 gr potatoes 🥔
  • 100 gr breadcrumb 
  • 12 capers 
  • Oregano 🌿 
  • Good quality extra virgin olive oil 

Method

I started cooking the octopus in boiling salted water for 30 minutes cover with a lid. After this time I let the octopus 🐙 in his water for 15 minutes to rest. Than I put it outside and I had cut the tentacles ( let them whole) and the head in small pieces. 
In a small pot put 2 tbsp of evoo, the shallot minced and the potatoes peeled and cut into cubes, then cover with the octopus’s water and cook for 20 minutes or until the potatoes are ready. With an electric mixer mash the potatoes and let aside. 
In a non stick saucepan put 2 tbsp evoo and the capers finely minced, the breadcrumb and a sprinkle of oregano 🌿. Toast until become gold and let aside. 

Cooking the pasta in boiling salted water ( I cooked one minute less because I need to sauté the pasta in the saucepan) 
In a saucepan gently fry the tentacles and let aside. Put them aside and in the same saucepan gently fry the small pieces of octopus and pour the mashed potatoes, put in the drained spaghetti and let them absorb the potato cream. 
Dial the plate: 
Spaghetti with potato cream, 2 tentacles, sprinkle with breadcrumb and finish with 1/2 tbsp extra virgin olive oil.
